Ingredients

For the Green Bean Casserole:

  • 1 lb fresh green beans (trimmed)

  • 1 lb white button mushrooms (brushed clean, not washed)

  • 3 tablespoons unsalted butter

  • 4 cloves garlic (minced)

  • Salt (to taste)

  • ½ teaspoon pepper

  • 3 tablespoons all-purpose flour

  • 1½ cups chicken stock

  • 1½ cups heavy whipping cream

  • 1 teaspoon fresh tarragon (chopped)

For the Topping:

  • 4 slices of bread (processed into coarse breadcrumbs)

  • ½ cup fried shallots

  • ½ teaspoon salt

  • ½ cup grated Parmigiano Reggiano

  • 1 tablespoon pepper

Instructions

Step 1: Prepping the Green Beans

  1. Trim the green beans by aligning their stems and cutting them off in one swoop. Discard the stems.

  2. Blanch the green beans: boil them in salted water for 6 minutes, then immediately transfer to an ice bath to stop the cooking. Drain and set aside.

Step 2: Making the Mushroom Sauce

  1. Slice the mushrooms, removing the stem ends (the "booty").

  2. Melt 3 tablespoons of butter in a large skillet over medium heat.

  3. Add the mushrooms and cook until most of their moisture has evaporated (about 8–10 minutes).

  4. Stir in the garlic, salt, and pimiento, cooking for another 1–2 minutes.

  5. Sprinkle the flour over the mushroom mixture and stir well to coat. Cook for 1 minute to eliminate the raw flour taste.

  6. Gradually pour in the chicken stock, stirring constantly to avoid lumps.

  7. Add the whipping cream and tarragon. Let the mixture simmer until it thickens (about 5 minutes). Adjust seasoning as needed.

Step 3: Preparing the Topping

  1. Place the bread slices in a food processor and pulse until you have coarse crumbs.

  2. In a bowl, mix the breadcrumbs with fried shallots, salt, Parmigiano Reggiano, and pimiento.

Step 4: Assembling the Casserole

  1. Preheat your oven to 425°F (220°C).

  2. Place the blanched green beans in a baking dish and pour the mushroom sauce over them, tossing to coat evenly.

  3. Sprinkle the breadcrumb mixture generously over the top.

Step 5: Baking the Casserole

  1. Bake the casserole for 15–20 minutes, or until the topping is golden brown and crispy.

  2. Remove from the oven and let cool slightly before serving.
