Ingredients
For the Stuffing/Dressing:
1 loaf of bread (about 10–12 cups, cubed and dried out, or use store-bought stuffing mix)
1 lb Italian sausage (half sweet, half hot)
2 tablespoons unsalted butter
2 celery stalks, diced
1 medium onion, diced
8 ounces mushrooms, diced
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
2–3 cups chicken broth (adjust as needed)
1 teaspoon poultry seasoning
Salt and pepper (to taste)
Instructions
Prep the Bread:
If using fresh bread, cube it and spread it out on a baking sheet. Dry it in the oven at 300°F (150°C) for about 30 minutes, until stale but not browned.
Cook the Sausage:
Heat a large skillet over medium heat.
Slice open the casing of the Italian sausage and remove the meat. Break it into small pieces as it cooks.
Once cooked through, remove the sausage and set aside, leaving the juices in the pan.
Cook the Veggies:
In the same pan, melt the butter. Add the celery, onion, and mushrooms. Season with salt and pepper, and cook until softened (about 5–7 minutes).
Add the garlic, rosemary, and thyme. Cook for an additional minute until fragrant.
Combine Ingredients:
Return the cooked sausage to the skillet and sauté everything together for 1–2 minutes.
Add the dried bread cubes to the pan. Stir to combine, ensuring the bread absorbs the sausage juices and vegetable mixture.
Add Chicken Broth:
Gradually pour in about 2 cups of chicken broth while carefully mixing. The goal is to rehydrate the bread without making it too soggy. The bread should be plump but still hold its shape. Add more broth as needed.
Season and Transfer:
Stir in the poultry seasoning. Adjust salt and pepper to taste.
Transfer the mixture to a buttered baking dish. For extra crispiness, avoid packing it down tightly—leave small pockets for airflow.
Bake the Stuffing:
Preheat the oven to 375°F (190°C).
Bake for 30 minutes, or until the top is golden brown and crispy.
Serve:
Let the stuffing rest for a few minutes before serving. Enjoy the combination of crispy edges and custardy, flavorful interior!
